White truffle

Gold in the kitchen, major element of gastronomy. White truffle is the most rare and expensive species of truffle. It has an irregular shape, due to the ground where it grows. The surface is smooth, soft, yellow or olive yellow. Its gleba is brown hazelnut and in some cases it has shade of red with small light veins. It releases a strong pleasant smell. Harvest period: September – December.
